I need to control many ESP8266 modules without opening ports on my router, so I was told to use MQTT protocols to manage locally or remotely the many esp8266 devices. I have worked with ESP8266 and Arduino with GPRS module regarding the implementation of MQTT communication between the device and an MQTT broker. I can provide you examples of ESP8266 communication with broker (both subscription and publishing). I do not have any experience on setting up an MQTT broker.
