Hi, I am an embedded system developer. I have already built such systems. The only thing remains is the accuracy you need. I have tested the designed PCB for it too. To suit your needs, I can modify the same. I have designed it based on esp32 withe 12 bit and 16 bit ADC and few digital inputs and outputs. Also some power monitoring and controlling devices were involved on modbus. These can be controlled and updated over internet. Data logging is interval based. I like to have such challenges, about fees, assuming you like the proposal, I just ask for a reimbursement for the parts and expenses (IE if you ask for an hi-precision, with stable voltage reference and temperature compensation converter, then Arduino's internal one is not fit could be somewhat expensive) .
