Low-poly models to optimise for performance and storage space are good, but have you considered creating textures as-needed? Generating environmental textures using maths while a level loads is an excellent way to have high-quality textures that use almost zero storage space, as demonstrated by the game kkrieger. It does increase load time, but if the processing can be done by the GPU this increase is tiny.

3D modelling: I can provide some examples of past low poly models that I've created, as well as provide the product quickly and well done. I also have experience in Unity3D, and know how 3D models from software to the engine work (e.g, parenting objects in creation so they don't break the prefab). Textures: I have experience in Substance designer, UV unwrapping and texture mapping, which wont prove to be a problem for your models.
