I want to run a expressJS nodeJS app alongside a laravel project which is already running, I'm using Apache2 and Ubuntu. If you have knowledge in RedBird or vHost, would be great. It shouldn't take long if you already have experience. TeamViewer would be good to do it together.

I have experience in setting up vHost using both Apache2 and Nginx. I have previously ran 9 different projects on the same server using the vHost settings using apache2. I can create a subdomain of an existing domain attached to the server and redirect the port request to 80 on apache2 using the vHost settings. It will take about an hour for the complete configuration. Let me know, if I can be of any help regarding the setup. I am available right now and can do that on teamviewer if you like.
