Magento - Categories and Products - New Installation

I have a magento store running live at the moment. It runs slow and needs a latest update of magento and a fresh theme (ves bigmart)
Following tasks are to be done:
1. Take backups in case things go wrong, you must be able to restore original
2. Export Categories and Products.
3. Delete the old installation completely.
4. Install a latest version of magento on website.
5. Import Categories and Product Details.
6. Install Ves Bigmart and Configure Front Page like in the theme demo.
7. Test Everything works fine.
8. All done
Please make sure you understand the above steps and take full responsibility.
