Convert a bitmap logo into vector format using Adobe Illustrator

I have a bitmap image that needs to be converted by hand to a clean vector image using illustrator. NO AUTOTRACE. Must be properly converted with layers and clean use of the same colors. No gradient colors required.
Please send vector samples of your work.
See 2 images attached. One without the circular background and text, once with. I need 1 image with BOTH in layers.
