Create Sub Categories On Website Using Shopify

The selected Freelancer needs to be a expert using Shopify. Please don't bid if you are not. They need to know how to create a effect category system which will enable me to create subcategories. Please take a look at my old website [login to view URL]
You can see what I mean by subcategories on here. An example would look like this.
Example: Match Attax - Match Attax 2012 - 2013 - 100 Club card
I understand that you may need to use a app on Shopify to achieve this. From the research I have done it looks like Uncomplicated Categories may be the best app however I am open to the right advice.
You are not expected to do all the categories just to point me in the right direction which will enable me to do this.
