Hi there, I've read your document. I'm interested in your project. I can make it with PIC microcontroller or AVR/arduino platform and develop it as SMD design as like a regular consumer product pcb. I use Sprint Layout 6.0 but I also work with Altium Designer. I have license for both as well as mikroC pro for PIC which is good for programming. For remote I think bluetooth will be best as modern people always heading to mobile apps. I can help you with the app too. I've team for apps.
