What a fun project!!! I like the specificity of your character and feel I could bring your rooster to life. Please look at my wolf in my Little Red Riding Hood in my profile pic and see if that style would work for you. How I paint characters is to have a human model pose to get the "expression" and look for images from the internet on animals who have the right posture.
