Crawl and Extract Data from Mobile Application

I need profiles extracted from a mobile application WITHOUT an API. The applicant needs to have experience with automating mobile "testing" on a compiled Android or iPhone application. Either will work fine.
I believe it's possible to be accomplished with:
- Appium

or any other testing/automation that would work on either iOS or Android.
I need text + pictures extracted.
NOTE: I do not have the source code for this application, it's a commercial application on the app store. There is no API.
